Some of you may know… and none of you may care… but… I’ve been eating low carb… keto… for about a year now. So… if you are familiar with keto recipes… you may have seen one for… Mug Cake… basically it’s a little cake you mix up using almond flour and cook it in a coffee mug in the microwave about a minute.
Except… I don’t do it that way… I mix it up in my favorite little mixing bowls and pour it into two small ramekins… and bake them in the oven for about 25 minutes. I know… it takes a lot longer… messes up more dishes… but… I like the finished product better.
The only thing is… for either version… there are a lot of things to get out of the cabinets… and of course they have to be put back. So often I’ll think about making one but decide it’s just too much trouble in the moment. Today was one of those days…
Enter… Bertha… who rolled her eyes… and asked me… why don’t I mix the dry ingredients for several at one time… and store them in little baggies. Then when the mood strikes me… I just have to melt butter and add the egg and vanilla. How simple is that?
So… that’s what I just did. I only messed up the measuring spoons once… the little baggies are labeled and ready to use at a moment’s notice.
Bertha… reminds me that it’s the same in my life… sometimes I’m so busy looking at the big picture that I don’t see the crayons. Hmmm… is that how that saying goes?
Here’s how I make my mug cake… it’s a combination of several recipes.
2 Tbsp Almond Flour
3 Tbsp Swerve Confectioners sugar replacement
½ tsp Baking Powder
1 Tbsp Cocoa powder (if I want chocolate) you can use a square of Lily’s baking chocolate… just melt it with the butter
A splash of Lily’s Chocolate Chips (again if it’s for chocolate)
Sprinkle of spices depending on the flavor. I usually use cardamom, cinnamon, nutmeg, ginger, cloves… the amount and the exact ones depending on what flavor I want. I’m thinking of heavy on ginger this fall.
1 Tbsp Melted Butter
1 Egg slightly beaten
½ tsp Vanilla or other flavoring
You can put it in two small sprayed or buttered ramekins or one large one and bake 350 for 20-25 minutes… and it is awesome!
Now… this is how I cook… and it’s the closest to a recipe that you will get out of me. There are several online… just Google… or you can play in the kitchen like I do… and see what comes out. Bertha… just said that” sorta how I write my blogs. And… she’s right… that’s sorta how I do most things… and she says that’s just right.
